NEW NL: MODERN DUTCH CUISINE, PAUL VAN WAARDEN

Paul van Waarden isn’t actually the author of this specific book. He is the creator of the recipes in it, but the book is written by R. Coops and A. Westerhoof. Now we got that straightened out, let’s talk about the inside of the book. Modern Dutch cuisine is a cook book about neglected ingredients of the traditional Dutch kitchen. Chef van Waarden created twelve menus – one for every month of the year – of three courses. Every course is a contemporary variation of regional or local dishes based on in season ingredients.
